Cajun Chick*n Salad

Ingredients (4 servings)

  • 1 pack Chick*n
  • 1 tbsp Cajun spice
  • 2 tbsp flour
  • 1 avocado
  • 1 red kumara
  • 1 parsnip
  • 60g cup pine nuts
  • 200g cup yogurt
  • 2 tbsp mango chutney
  • Fresh coriander
  • 1 lemon
  • Roasted capsicum
  • Baby spinach

Instructions

  1. Preheat oil; coat chick*n in Cajun + flour and fry.
  2. Cut and fry kumara + parsnip chips.
  3. Toast pine nuts; prep avo + capsicum.
  4. Mix yogurt, chutney, coriander, lemon.
  5. Assemble: greens, avo, chick*n, dressing, nuts, chips.
