Ingredients (4 servings)
- 1 pack Chick*n
- 1 tbsp Cajun spice
- 2 tbsp flour
- 1 avocado
- 1 red kumara
- 1 parsnip
- 60g cup pine nuts
- 200g cup yogurt
- 2 tbsp mango chutney
- Fresh coriander
- 1 lemon
- Roasted capsicum
- Baby spinach
Instructions
- Preheat oil; coat chick*n in Cajun + flour and fry.
- Cut and fry kumara + parsnip chips.
- Toast pine nuts; prep avo + capsicum.
- Mix yogurt, chutney, coriander, lemon.
- Assemble: greens, avo, chick*n, dressing, nuts, chips.
