Chick*n and Leek Pie

Ingredients (4 servings)

  • 4 tbsp vegan butter
  • 1 onion
  • 1 carrot
  • 2 celery sticks
  • 2 leeks
  • 2 garlic cloves
  • ¼ cup flour
  • 1 cup plant broth
  • 1 cup sour cream or vegan cream
  • 2 tbsp white wine
  • 1 tbsp Dijon mustard
  • ¼ cup parsley
  • 1 pack chick*n
  • 1 tsp salt
  • ½ tsp pepper
  • Puff pastry


Instructions

  1. Shred chick*n.
  2. Chop veg.
  3. Saute onion, carrot, celery.
  4. Add leeks + garlic.
  5. Add flour + brown.
  6. Add broth, sour cream, mustard, parsley, wine; thicken.
  7. Add chick*n + season.
  8. Transfer to dish + cover with pastry.
  9. Brush with butter + bake 25-30 min @200C.
