Chick*n Caesar

Ingredients (4 servings)

  • 1 head cos lettuce
  • 250g hemp chick*n, shredded
  • 120g cashews
  • 40g nutritional yeast
  • 1 tbsp horseradish
  • 200g croutons
  • 100g plant mayo
  • 1 tsp Dijon mustard
  • 1 tbsp capers, chopped
  • 1 garlic clove, crushed
  • Zest of 1/2 lemon
  • Facon: coconut flakes, oil, soy sauce, maple syrup, smoked paprika, liquid smoke


Instructions

  1. Make facon: coat coconut flakes; bake 10–14 min at 200°C.
  2. Blend cashews, yeast, horseradish for cheesey sprinkle.
  3. Whisk dressing: mayo, mustard, capers, garlic, lemon.
  4. Prep lettuce; mix half dressing with chick*n.
  5. Assemble bowls with lettuce, chick*n, croutons, facon.
  6. Top with dressing + cheesey sprinkle.
