Ingredients (4 servings)
- 1 head cos lettuce
- 250g hemp chick*n, shredded
- 120g cashews
- 40g nutritional yeast
- 1 tbsp horseradish
- 200g croutons
- 100g plant mayo
- 1 tsp Dijon mustard
- 1 tbsp capers, chopped
- 1 garlic clove, crushed
- Zest of 1/2 lemon
- Facon: coconut flakes, oil, soy sauce, maple syrup, smoked paprika, liquid smoke
Instructions
- Make facon: coat coconut flakes; bake 10–14 min at 200°C.
- Blend cashews, yeast, horseradish for cheesey sprinkle.
- Whisk dressing: mayo, mustard, capers, garlic, lemon.
- Prep lettuce; mix half dressing with chick*n.
- Assemble bowls with lettuce, chick*n, croutons, facon.
- Top with dressing + cheesey sprinkle.
