Chick*n Caesar Pasta

Ingredients (3 servings)

  • 300g cooked pasta
  • 2 handfuls lettuce
  • 1 pack vegan chick*n
  • 1 can chickpeas
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt & pepper
  • Dressing: 100g vegan mayo, 1 tsp Dijon, 1 tbsp capers, 1 garlic clove, lemon zest
  • Vegan parmesan: cashews, nutritional yeast, salt (blended to a crumb)

Instructions

  1. Roast chickpeas with spices 20 min 180°C.
  2. Shred chick*n.
  3. Mix chick*n, chickpeas, lettuce + dressing.
  4. Stir through pasta, top with parmesan crumb
