Chick*n Fajitas

Ingredients (8 servings)

  • 8 small flour tortillas
  • 300g sour cream or plant yoghurt
  • 2 × 250g packs chick*n
  • 4 tbsp olive oil
  • 2 garlic cloves, crushed
  • Juice of 1 lime
  • 1 tsp chilli powder
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp soy sauce
  • 1 tsp thyme
  • Pinch of salt
  • 1 handful coriander, finely chopped
  • For peppers: 2 tbsp olive oil, 1 red onion (wedges), 4 capsicums (strips), 200g cherry tomatoes
  • 1 tsp Cajun spice mix
  • Salt & pepper


Instructions

  1. Slice chick*n; marinate with spices, garlic, lime, soy, herbs for 2 hours.
  2. Pan‑fry onion wedges until softened and charred; keep warm.
  3. Cook peppers in batches with Cajun spice; add tomatoes.
  4. Grill chick*n in batches until browned; squeeze lime over.
  5. Warm tortillas.
  6. Assemble with peppers, chick*n, sour cream/yoghurt, coriander.
