Ingredients (8 servings)
- 8 small flour tortillas
- 300g sour cream or plant yoghurt
- 2 × 250g packs chick*n
- 4 tbsp olive oil
- 2 garlic cloves, crushed
- Juice of 1 lime
- 1 tsp chilli powder
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tbsp soy sauce
- 1 tsp thyme
- Pinch of salt
- 1 handful coriander, finely chopped
- For peppers: 2 tbsp olive oil, 1 red onion (wedges), 4 capsicums (strips), 200g cherry tomatoes
- 1 tsp Cajun spice mix
- Salt & pepper
Instructions
- Slice chick*n; marinate with spices, garlic, lime, soy, herbs for 2 hours.
- Pan‑fry onion wedges until softened and charred; keep warm.
- Cook peppers in batches with Cajun spice; add tomatoes.
- Grill chick*n in batches until browned; squeeze lime over.
- Warm tortillas.
- Assemble with peppers, chick*n, sour cream/yoghurt, coriander.
