Ingredients (4 servings)
- 2 tbsp tamarind paste (or 1 tbsp tamarind concentrate)
- 2 tbsp palm sugar
- 3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- ¼ tsp white pepper
- 250g hemp chick*n
- 225g rice noodles
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 cups bean sprouts
- ½ cup garlic chives, chopped
- ½ cup roasted peanuts, crushed
- 3 tbsp neutral oil (for frying)
Optional:
- 1–2 tbsp lime juice
- 1 tsp chilli flakes
Instructions
- Make tamarind sauce
- Soak noodles
- Marinate chick*n
- Prep aromatics
- Sear chick*n
- Fry garlic + shallots
- Add noodles + sauce
- Add sprouts + chives
- Return chick*n, serve with peanuts
