Chick*n Pad Thai

Ingredients (4 servings)

  • 2 tbsp tamarind paste (or 1 tbsp tamarind concentrate)
  • 2 tbsp palm sugar
  • 3 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • ¼ tsp white pepper
  • 250g hemp chick*n
  • 225g rice noodles
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 cups bean sprouts
  • ½ cup garlic chives, chopped
  • ½ cup roasted peanuts, crushed
  • 3 tbsp neutral oil (for frying)


Optional:

  • 1–2 tbsp lime juice
  • 1 tsp chilli flakes


Instructions

  1. Make tamarind sauce
  2. Soak noodles
  3. Marinate chick*n
  4. Prep aromatics
  5. Sear chick*n
  6. Fry garlic + shallots
  7. Add noodles + sauce
  8. Add sprouts + chives
  9. Return chick*n, serve with peanuts
