Ingredients (4 servings)
- 250g hemp chick*n, shredded
- ½ cup vegan mayo
- 1 avocado
- 1 tsp black pepper
- 1 tsp dill
- 1 tbsp chives, sliced
- Pinch of salt
- ½ red onion, diced
- 1 red capsicum, diced
- 1 tbsp parsley, finely chopped
- 8 slices bread
- Dijon mustard
Instructions
- Mash the avocado with black pepper.
- Mix chick*n, mayo, dill, chives, salt, diced red onion, diced capsicum, and chopped parsley.
- Spread Dijon mustard on half the bread slices; spread mashed avocado on the remaining slices.
- Layer the chick*n mixture evenly onto the avocado slices.
- Close sandwiches, slice, and enjoy. Optional: add grated vegan parmesan.
