Classic Chick*n Avo Sandwich

Ingredients (4 servings)

  • 250g hemp chick*n, shredded
  • ½ cup vegan mayo
  • 1 avocado
  • 1 tsp black pepper
  • 1 tsp dill
  • 1 tbsp chives, sliced
  • Pinch of salt
  • ½ red onion, diced
  • 1 red capsicum, diced
  • 1 tbsp parsley, finely chopped
  • 8 slices bread
  • Dijon mustard


Instructions

  1. Mash the avocado with black pepper.
  2. Mix chick*n, mayo, dill, chives, salt, diced red onion, diced capsicum, and chopped parsley.
  3. Spread Dijon mustard on half the bread slices; spread mashed avocado on the remaining slices.
  4. Layer the chick*n mixture evenly onto the avocado slices.
  5. Close sandwiches, slice, and enjoy. Optional: add grated vegan parmesan.
