Ingredients (4 servings)
- 1/2 cup soy sauce
- 1/4 cup hoisin
- 1 tbsp maple syrup
- 2 tbsp rice vinegar
- 3 tbsp peanut butter
- 375g rice noodles
- 2.5 cups stock
- Baby spinach
- 2 tbsp sesame oil
- 6 garlic cloves
- 1 tsp chilli flakes
- 300g plant mince
- 1 onion
- 10 mushrooms
- 2 spring onions
- Cracked pepper
Instructions
- Mix sauce ingredients
- Cook noodles + cool
- Simmer broth with spinach + half sauce
- Fry garlic + chilli in oil
- Add mince + cook 3 min
- Add onion, mushrooms + remaining sauce; cook 10 min
- Assemble bowls with noodles, broth, mince mix, spring onions
