Sausage and Mash

Ingredients (4 servings)

  • 1 kg potatoes, peeled and chopped
  • 3 tbsp butter (or vegan butter)
  • 1 tbsp wholegrain mustard
  • 1 tsp garlic powder
  • 1 tbsp nutritional yeast (optional)
  • Salt and pepper to taste
  • 8 plant-based sausages (2 per person)
  • 1 tbsp neutral oil
  • 2 cups vegie gravy
  • 2 tbsp chopped parsley


Instructions

  1. Place potatoes in a pot of salted water. Bring to a boil and cook 12–15 minutes until tender.
  2. Drain well, then mash with butter, mustard, garlic powder, nutritional yeast (optional), salt, and pepper.
  3. Heat oil in a frying pan over medium heat. Add sausages and cook 8–10 minutes, turning until browned.
  4. Pour gravy into the pan and simmer 2–3 minutes to warm and coat sausages.
  5. Serve mash on plates, top with sausages and gravy, and garnish with chopped parsley.
