Smoky Chorizo Paella Bowl

Ingredients (4 servings)

  • 1 cup corn kernels
  • 1 tbsp oil
  • Salt & pepper
  • ½ cup peas
  • 1 pack Plan*t spicy chorizo
  • 6 cherry tomatoes per bowl
  • 1 avocado
  • ½ red onion
  • 2 cups lettuce
  • 1 tin black beans
  • 2 cups cooked brown rice
  • 2 tsp smoked paprika
  • 2 garlic cloves
  • Aioli: mayo, garlic, coriander, lime, jalapeno optional, salt


Instructions

  1. Roast corn 15 min at 210C.
  2. Pan-fry chorizo.
  3. Fry garlic + paprika then add rice + peas.
  4. Make aioli.
  5. Assemble bowls: lettuce, rice, beans, tomatoes, onion, avo.
  6. Top with chorizo + corn, drizzle aioli.
